Loved this dizzying array of yumminess! I also make a similar lentil/tomato kind of stew, but with whole barley instead of rice, and feel very virtuous after eating it!
I’m eating more meat these days, so this post is inspiring me to take the trouble to buy/cook it, and in more creative ways. I hope you got rested up after your week of travel/family. Thanks for a great read!

If I could do our trip all over again, I would have built in a day of total rest upon arriving (in Dublin), instead of hitting the ground running 6:30 am Irish time, after flying all night from Chicago. I was just so out of it the first day, instead of enjoying myself!
Also, I would have created opportunities to eat the delish desserts I came across and *really* wanted, but didn’t have time to eat. I still regret all the cream slices and cheesecakes I passed up!
Irish chocolate was a bit too sweet for me (chocolate being the substitute for the desserts I missed!) But the Brona brand, which I found in County Kerry, was terrific! I should have stocked up on it while I had the chance!
